Egg bake for the win, on this fine Sunday morning! 🍳 Yummmm. So easy, and enough for leftovers. This makes for a easy, quick, on the go meal perfect for you busy bees. . . πŸ‘‰πŸ»β€’sautΓ© mushrooms, onion, red bell pepper, turkey bacon for about 5 min just to soften up the veggies. Scramble 8 eggs in a bowl. Brought back one of my favorite summer lunches - a Greek pita pizza! 😍 The star of the show is the piquillo hummus from @darista dips. Soooo good! πŸ‘ŒπŸ»πŸ‘ŒπŸ» Start with a toasted pita and hummus, add whatever veggies you have on hand + feta cheese! Easy lunch! Today I have a Jospeh’s pita (1) toasted and topped with Darista Dips piquillo hummus (3), feta (1), cucumber, red pepper, carrots, tomato, purple cabbage, and some za’atar. 5 sp! Sometimes I add pickled onion or green onion, banana peppers, and grilled chicken to bulk it up. The cauliflower-crust/almost-paleo pizza (there’s some Parmesan in there) exemplified that some kitchen experiments work better than others...but most are still edible. πŸ˜‚πŸ˜‚πŸ˜‚ This is a cauliflower crust with a mushroom, onion, and spinach tomato sauce topped with baked eggs and Parmesan. Ingredients were strong but baking process needs work - maybe fried eggs next time. πŸ€·πŸ»β€β™€οΈ and some fresh basil! 🌿
