I saw a video on YouTube of Michael Twitty making this collard green with peanut butter and coconut milk type of sauce and I just had to get in my kitchen to recreate it. As you all know, I'm ultra obsessed with food and how it relates to my ancestors. I'm obsessed with the ingenuity and the resourcefulness of a people separated from their homelands who just made a way out of no way. He talked about how when we think of soul food sometimes we are misguided in our belief that it was a greasy spoon cuisine. Our ancestors were primarily plant based...that's one of the reasons I chose to go vegan, but I digress. These folks could make a meal out of anything and make it taste amazing! That's the pride that I carry in my heart. This was really good btw
