Spicy Vegetable Briyani Ingredients Basmati rice - 2 cups Cinnamon stick - 1 inch Cloves - 4 Cardamom - 2 Bay leaf - 1 Onion, sliced - 2 Carrot, diced - 1/4 cup Peas - 1/4 cup Potato, cubes - 1/2 cup Beans, cut - 1/4 cup Curd - 1 cup Red chilli powder - 1 tsp Coriander powder - 1 tsp Briyani masala - 2 tsp Mint leaves, chopped - 1/4 cup Coriander leaves, chopped - 1/4 cup Ghee - 1 tbsp Oil - 2 tbsp Preparation 1) Soak rice for 30 mins. 2) In a pressure cooker, add oil, ghee followed by all the spices. Stir and then add onions. Fry until they turn golden brown. 3) Now add the all the vegetables and the dry masalas. Cook for minute. Add the mint and coriander leaves. 4) Now add curd, mix well. Then add rice and water ( for 1 cup rice add 1.5 cups water). Cook for 2 whistles. Tada! Spicy and easy Vegetable Briyani is ready.
