How gorgeous does this beet hummus look?! it tastes as good as it looks.
Beets are a great source of iron, magnesium, calcium, folic acid, vitamins A & C and niacin. It cleanses the blood and colon, is an immunity booster, and supports the liver and gallbladder. What a perfect base for a delicious hummus!
1 can garbanzo beans
1 tsp salt
3 T tahini
2 T lemon juice
2 T olive oil
2 T fresh parsley
3 T roasted pine nuts
Wrap the beets in foil and bake at 400 for 20 minutes. Add all ingredients in a food processor and blend until smooth. Serve with your favorite veggies or pita bread.
