My dinner tonight comes from two of my favorite Keto influencers. I made the radishes O'Brien from the @craveableketo cookbook by @peaceloveandlowcarb and the egg casserole that @keto.connect made on their YouTube live yesterday. In the radishes I used green onion and jalapenos as a sub for the bell peppers in her recipe and in the casserole I used ground beef, spinach, eggs, heavy cream, and goat cheese. I used to make this yummy skillet meal prep with sweet potatoes but on keto sweet potatoes are a no go 😭 so, i replaced it with zucchini and that’s what I’ll be eating this week for #mealprepmonday • it has chopped up zucchini, mushrooms & ground turkey.
