One thing that I encounter often & honestly breaks my heart....... is when people give me the excuse that eating healthy is β€œhard” or β€œexpensive” or β€œinconvenient”....... πŸ’” It’s so difficult for me to comprehend the resistance & unconsciousness people carry around & what they allow themselves to put inside their precious bodies daily. πŸ’” I understand that we’re all moving quickly. I understand that planning & preparing meals takes time. I understand that organic, pasture-raised, grass-fed beef is not .99 cents per pound. But what does that matter???? πŸ’‘ . We are all blessed with an incredible machine....... Our body is the only thing we have to live in until we leave this planet.......⏳ . In order to fully & completely love others, we must love ourselves first. Eat healthily 80-90% of the time & enjoy yourself when you feel like enjoying yourself....... It’s okay to have cake or pizza every once in a while....... but everyday? All the time? (Ouchhhhhh...... my heart.......πŸ’”) . We must cherish & nourish our bodies. 🌿 The fatigue....... the physical pain....... the disease....... this can all be avoided if we just WAKE UP. πŸ’‘If we open our eyes & mind. Love your body. Grilled Chicken with Avocado Pesto Zoodles and Roasted Garlic Carrots. An easy and fairly quick meal. This one can be finished in under an hour. . . The chicken is seasoned with Italian seasonings and grilled in a cast iron grill pan. I find that cooking in cast iron gives food better flavor. When cooking chicken breast, make sure it is even thickness throughout. If you need to pound it to get it even, do so. Over cooking your chicken will make it inedible come lunch time. . . A meat thermometer is also a good investment to make. Too many of us are afraid to undercook our chicken so we cook it far too long and kill it. A meat thermometer will help you to ensure it is cooked through while keeping it juicy and soft. . . The avocados in the pesto give it a creaminess making it almost like an Alfredo sauce. Zucchini noodles make for an easy way to get in an extra serving of vegetables where you wouldn’t normally get one.
