On my second bottle of fermented carrots from @shortmountaincultures. I usually get the itch for something salty late in the afternoon and have been turning to these to scratch the itch. Like most fermented vegetables, they’re effervescent, have a satisfying crunch to them, and satisfy that salty/briney taste that I’m after.
Chicken Avocado Burgers, topped with chipotle ranch dressing, on a @smartbakingcompany smart bun, with a tomato salad on the side.
I enjoyed the smart bun; the texture was very close to a regular bun, but I could taste the erythritol they add to it, so it was a bit odd to be eating a sweet hamburger bun.
The chicken burgers were a huge hit with all the kids and I wish I had made more!
- 1lb ground chicken
- 1 large avocado
- 1/2 cup crushed pork rinds
- 2 Tbsp minced garlic
- 1 egg
- 1/2 tsp salt
- 1/4 tsp pepper
- Keto friendly bun (optional)
Put all the ingredients in a bowl and use your hands to mix together. Form patties, but try to make sure they aren’t too thick or it will take longer too cook. Heat a frying pan medium heat and add oil. Cook for about 10 minutes per side until internal temperature reaches 165*. The bun is completely optional.
