Swiss rolls was actually one of my childhood favourites, my mum always used to make a chocolate one filled with buttercream 😋 Amazing, I know! I stumbled across a vegan recipe of a Swiss roll and tried it out the other week. This Swiss roll is made out of dates, almond meal and filled with a coconut-vanilla buttercream 😍 Free from refined sugar, gluten and doesn’t require an oven 👏🏻
Super simple broccoli Buddha bowl 🥗
Had this ages ago now, but it was some sticky white rice (didn't have wholegrain at the time 😭 - finally got some just recently 😇), heated frozen corn and sweet peas, previously cooked beans seasoned with coriander, cumin, soy sauce, and lots of chili, plus some lovely steamed broccoli 🤤
I could probably eat broccoli every day, and I can't really see a meal not getter better with some broccoli added 😋 steamed for bowls like this, frozen inside a green smoothie bowl... what veggie could you add to anything ☺️?
Chose a simpler picture today, because I'm so excited about going to the pre-Easter event of my local animal rights group 😄 there will be a (fully vegan of course) "buffet platter" to which I will contribute some turmeric falafels, that I made yesterday, and a lecture, plus other good stuff 💗
It's also the world day for the end of fishing, so I know some of the others will have made non-fishy variants of traditional Swedish fish-based Easter food 😃 and talking about special days, today is Earth Hour too, which is also always so fun 😄 as usual, I and my mom (and cat) will drink tea, and play board games together with living candles lit in the darkness ☺️ it's just so cozy 😍 what will you do for Earth Hour tonight ☺️?

Did you know that most Americans do not get their daily recommended amount of fiber? Did you know we should really actually triple it! Fiber is a great way to keep you full longer, good for the gut and balances blood sugars. I have been really digging this cereal from @naturespathorganic! Pairing it with chia seeds and spirulina dusted yogurt makes a great source of fiber and a yummy breakfast!

Banana pancakes: quick & simple recipe! 🍌
Blend a cup of oats until it turns into oat flour. Then stir in a teaspoon of baking powder and cinnamon. Once combined blend in one ripe banana and 2/3-1 cup of water. On a medium to high heat pan melt some coconut oil and pour a reasonable amount of batter. Cook for about 2-4 minutes on each side. Once golden brown, plate it and add toppings of your choice! We added some slices of banana, a dash of cinnamon, and a drizzle of maple syrup.

So, I had a back injury that left me practically immobile. I went to a couple of doctors, got various pain meds and I’m finally starting to feel better. I can walk, but not for too too long. It’s super stressful especially weight-wise because I can’t workout or do much of anything. I know diet is more important than exercise, but yeah, still stressful. Here’s a smoothie (I’ve been making at least one a day to keep my eating in check.) Almond milk, vegan yogurt, blueberries, strawberries, oats & turmeric.
