Swiss rolls was actually one of my childhood favourites, my mum always used to make a chocolate one filled with buttercream πŸ˜‹ Amazing, I know! I stumbled across a vegan recipe of a Swiss roll and tried it out the other week. This Swiss roll is made out of dates, almond meal and filled with a coconut-vanilla buttercream 😍 Free from refined sugar, gluten and doesn’t require an oven πŸ‘πŸ»

Mmm...#dinner! Didn't waste much time trying to take a pretty pic with this one! Was too hungry & couldn't wait to devour my dinner! Filled a thin pastry wrapper with #wildrice / #brownrice, shredded #sweetpotato, #carrots, & #zucchini. Added a dash of coriander, cumin, pink Himalayan salt, garlic powder & chili flakes, then baked until crispy. Sauteed some #asparagus & #spicytofu on the side. Did you know that most Americans do not get their daily recommended amount of fiber? Did you know we should really actually triple it! Fiber is a great way to keep you full longer, good for the gut and balances blood sugars. I have been really digging this cereal from @naturespathorganic! Pairing it with chia seeds and spirulina dusted yogurt makes a great source of fiber and a yummy breakfast!

Banana pancakes: quick & simple recipe! 🍌 Blend a cup of oats until it turns into oat flour. Then stir in a teaspoon of baking powder and cinnamon. Once combined blend in one ripe banana and 2/3-1 cup of water. On a medium to high heat pan melt some coconut oil and pour a reasonable amount of batter. Cook for about 2-4 minutes on each side. Once golden brown, plate it and add toppings of your choice! We added some slices of banana, a dash of cinnamon, and a drizzle of maple syrup.

So, I had a back injury that left me practically immobile. I went to a couple of doctors, got various pain meds and I’m finally starting to feel better. I can walk, but not for too too long. It’s super stressful especially weight-wise because I can’t workout or do much of anything. I know diet is more important than exercise, but yeah, still stressful. Here’s a smoothie (I’ve been making at least one a day to keep my eating in check.) Almond milk, vegan yogurt, blueberries, strawberries, oats & turmeric.
