It's #tbt and I'm thrown it back to these Smashed Curried Chickpea Collard Wraps 🤤
Maybe it's the sun we are finally getting here in Vancouver or maybe it's just a what my body is needing but I'm definitely wanting something sunshiny ☀️ but yet still with warming spices. This wrap definitely delivers that and I cannot wait to have it with a bit of Butternut Squash Soup this evening!
Here's the low down on my thoughts on grains 🌾.....as you know I've been off grains of awhile, and truth be told I don't actually eat a lot of grains to begin with. Why? Well it's simple really....even though grains are a great source of minerals and fiber they are also super high in carbohydrates or....sugar! Sugar creates inflammation in the body, increases PMS symptoms, creates unstable blood sugar, energy crashes, brain fog and so much more! So it is still important that we are not living off of grains because of all this...
When I do consume grains (I recommend once or twice a week MAX) I am also super choosy about the ones I pick. Grains like chickpeas, lentils, black beans are also super mineral dense and have high fiber contents than those of rice (brown or white), quinoa, millet, barely, wheat or amaranth. I also like to make sure that I'm pairing these nutrient dense, high fiber grains with a good healthy fat (or protein), as well as some fiber rich veggies to further slow down the absorption of sugar into the blood stream minimizing all of the effects of that sugar! This Collard wrap has got exactly that going on❣️
Curried Chickpea Smash Collard Wraps
::1 can Organic Chickpeas (I love @earths_choice )
:: 1 tbsp Curry Powder of choice (I totally blend my own to my own taste)
::1 tbsp fresh chopped Cilantro
::1 finely chopped or shredded 🥕 ::1 Celery rib finely chopped
::1 chopped Green Onion
::1 bunch of Collard Greens with Large Leaves
:: Smash together 🥑, Chickpeas, Carrot, Celery, Curry Powder, Green Onion and Cilantro in a bowl with a potato masher until Chickpeas & 🥑 are mostly smooth (you want some Chickpea chunks). Add about 1/4-1/2 cup of Smash to a Collard 🍃 (amount varies with size of leaves), roll and then chomp away!!!
Finally made it to @earthtotablebondi so worth it!
