Coconut Chutney is such a perfect condiment for South Indian dishes but goes equally well in sandwiches! Normally I don’t like making chutneys just love eating them :) but this one was just so simple and so delicious that had to share. Thaw frozen coconut in the microwave, while it thaws heat up a bit of oil and add urad dal and let it brown then add red chili powder and hing. Add coconut, turn off the flame and add salt and tamarind paste. Add water and grind. Add mustard seeds and whole red chili tempering in top. Super yummy!!! I could eat it by the spoonfuls! #vegetarian#vegan#glutenfree#southindianfood#chutney
