Pumpkin Spinach and Walnut Spaghetti 🍝

200 g spaghetti (use gluten-free if you are gluten-intolerant)
3 tbsp / 45 ml olive oil
2-3 garlic cloves, finely diced
2 cups of cubed butternut squash / pumpkin*
about 100 g spinach
½-1 tsp chilli flakes (depending on level of heat and your preference)
½ lemon, zest and juice
salt and pepper, to taste
30 g walnuts, finely chopped .
Trying buckwheat groats for the very first time. There's still so many things out there that I've not tried, and I'm sure you reading this have not either. Still, people think vegans have nothing to eat, or have very very limited options, it's sad! .
Smoothie is bananas, frozen mix berries, fresh ginger, cinnamon powder and ground flax seeds. 🙌
On top is ground flax again, sunflower seeds, blueberries, buckwheat groats and half a kiwi, I was salivating when cutting the kiwi, absolutely HAD to eat the other half! 🥝💚
