{Turmeric Chia Pudding and Coconut Yogurt} ✨🌞 . A recipe post on my blog has been long overdue (sorry guys 😅)!so here is one of my favourite breakfast and snack option that fuels me for the day. I've combined my love for turmeric lattes and chia pudding into one and it's literally the 💣. . Chia seeds and turmeric are two things that I've been crazy for this new year because of the many powerful nutrients they posses for healing the skin and making you glow from the inside out. . To top off my #turmeric #chiapudding I added a large dollop of @enjoyyoso coconut yogurt, sautéed pear in @leesprovisions brown butter ghee and @nutiva coconut oil with some buckwheat crumble. . Started this rainy Tuesday morning off with a super tasty smoothie bowl 🍌 I’m going to hot yoga this morning and spending my whole day getting school work done 📝 so I wanted to start the day with a filling, nutritious meal! The base is: 1 cup of unsweetened almond milk, 1 scoop of @pescience vegan peanut butter delight protein, organic spinach, one frozen banana, and a whole lot of ice! I topped it with half of a carob chip @perfectbar, some vegan dark chocolate chips, and @purely_elizabeth granola (my fav granola eveeeer) 🎉 lots of protein, micronutrients, and superfoods fueling me today 💪

The kiddos are finally getting better!! We had a lot fun playing with Swiss Chard this morning. Below are three tips for prepping your greens🌿 . 1. Buy what you will cook in the next 5-7 days. Greens do not last long. Also, the nutritional value goes down the longer they hang out in your fridge. This is where menu planning is key. Make a plan for what you are going to do with the veggies — example sauté the Swiss chard and serve it with breakfast with eggs and kimchi. If you have a plan they are less likely to be forgotten in a veggie drawer and thrown out two weeks later. 2. Cut the leaves with scissors. I learned this trick from Cris of @h3farms , it’s so much easier!! And save those stems, like the Swiss chard ones and chop them up and throw them into a soup, or sauté them a few minutes before you throw the leaves in. 3. Wash and dry your greens in a salad spinner. I am a big @oxo fan. The dryer you greens, the longer they last! I throw in a clean dry tea towel (or paper towel) to keep the greens crisp once washed. You can place the greens in a large glass lock container, reusable produce bag or Ziploc bag (although I have cut my use of plastic bags significantly thanks to Christine @conscious_cooking + @plasticfreefoodie🌿 . Sweet or savory breakfast, which do you prefer? I loveee berry smoothie bowls but there's nothing like a hearty savory breakfast sometimes🙌🏽 This savory wrap was satisfying and full of my favorite veggies (portabella mushrooms+ Swiss chard), @hilaryseatwell veggie burger, hummus and the best grain free @sietefoods tortilla! Feels like a throwback to India today as i’m enjoying this delicious Kerala curry! . My boyfriend and I did a Kerala cooking course when we were there and we learnt how to make some incredibly delicious food and it’s all completely plant based! . Only difference for me is that they wanted to cook it with 4 chillies 🌶😥🤯 but having the pathetic mouth that I have I could only manage half a chilly 🙈😂 However it was so delicious and flavourful! . So we recreated it last night and I had the leftovers for lunch today. I cannot describe how tasty this was! . I’m pleased as I definitely used to be someone who just couldn’t cope with a curry- shows you have to keep persevering and not block yourself from discovering amazing things out of fear- pretty sure that applies to WAY more than just food! . Anyway I’m well aware that I’ve been completely rubbish at posting the last few weeks but I’ve now started my new job and am moving flat this weekend and so will be able to post A LOT more after that! . Also have some very exciting news that I will be announcing later or tomorrow so watch this space!

Start your day off with this nutritious and filling breakfast. A source of fiber, omega 3s and antioxidants. Overnight Oats Chia Pudding Serves: 1 person Ingredients - 1/4 cup Organic Steel Cut Oats - 1 Tbsp Organic Chia Seeds - 2/3 Cup Almond Milk - 1 Tsp Raw Wildflower Honey - 2 Tbsp Icelandic Vanilla Yogurt - 1 Tbsp Cooked Blueberries turned into jam Instructions -Add the first four ingredients in a small cup or bowl and mix them well. - Leave the mixture in the fridge overnight to thicken. - In the morning, add the yogurt and blueberries as your topping. - You can choose whatever topping you choose. Get creative and try a new topping everyday. Other yummy options are cacao nibs, walnuts, banana slices, strawberries, or peanut butter.
