Dark teff porridge topped with oven-roasted root vegetables - rutabaga and parsnip, scallions - with olive oil, rosemary, soy sauce, Sriracha. Don’t forget a drizzle of balsamic, cilantro. If you haven’t tried teff you are sooo missing out: it has amazing sweet notes of malt and cocoa, and incidentally, is the smallest grain on the planet. 👌🏻
Simple, quick, delicious dinner! Baked salmon with quinoa and veggies, and had a baby spring mix salad on the side 🥗
I usually buy a bag of frozen salmon fillets since we make it fairly often. Thaw the salmon overnight or during the day. Drizzle with some olive oil and season with @traderjoes 21 seasoning salute. Bake at 425 degrees for 14 minutes. The Quinoa with vegetable melange from @traderjoes only takes 6-7 minutes to heat up on the stove!
