Day 2 of AIP complete and found some flavor. 👍 Chicken and avocado on celery root "tortillas" (just peeled and thinly slices celery root). Six #smartpoints Chicken Fingers and Fries. BUT, so much healthier than what I ate last night. No flour, no potatoes, not fried, nothing artificial. Baked almond meal coated chicken, carrot and cauliflower “fries,” and honey mustard dipping sauce. 🍗 Whisk an egg in a cake pan. Mix 1 cup of almond meal with 1/4 tsp. any or all salt, pepper, onion salt, granulated garlic, and paprika in a second cake pan (you’ll use 1/8-1/4 cup to coat each serving of chicken for point counting purposes). Cut chicken breast(s) into fingers, coat in egg, then coat in almond meal. Place on an oiled baking sheet and bake for 40 minutes at 400. I flipped twice, and cooked on the top rack the last 5 minutes (3sp per serving) 🥕🍟 Lightly oil a baking sheet. Place carrots and cauliflower on baking sheet. I used an oil sprayer to coat the top of the veggies. Salt. Bake at 400 for 25-30 minutes, flipping once. *put these in after you flip your chicken tenders (1 tsp. Olive oil = 1sp). 🥣 For dipping sauce (1 serving), mix 1 Tbsp. Spicy mustard with 1/2 Tbsp. Raw honey (2sp). Avoiding honey? So who doesn't like Apple pie? Well I made a 3sp apple pocket! Check out my stories for the directions. But it's 3sp worth of #2ingredientdough and then I took peeled apples mixed with cinnamon (apple pie spice preferred but I was out) splash of vanilla and a dash of splenda. Microwaved for 3 to 4 minutes. Roll out dough and put apples in, add a bit of @waldenfarmsinternational caramel sauce fold over and seal. Spray top with spray of choice sprinkle with cinnamon and bake at 450 for 12 to 15 minutes. And enjoy. I made some more of @ww_socal's peanut butter cups. These are so decadent! 2 SP each or 7 SP for the whole batch (4 mini cups). Head over to her page and check her stories for the recipe with step-by-step directions. The only thing I change is that I add a tsp of Swerve to my PB mixture to sweeten it up. Made @thedailydoseofpepper ‘s Crockpot Chicken Stuffing tonight for dinner (I’m on a DDOP roll this week). I put mine in the WW recipe builder to determine how much a 4th would be, and let me tell you, this made a hugggeee portion for 8sp. I topped it over french cut beans. Found @traderjoes - we all know that lentils are 0sp, so these may not seem like a great find - however, these lentils are SO good. I find dry lentils get too mushy when I cook them, but these pre-cooked lentils retain their shape and texture better than any others I’ve tried. While they do require constant refrigeration, they have a pretty long shelf life. These can be warmed or eaten cold.
