My lunch today was a big plate full of raw and toasted veggies with humus and peanut butter dressing. Great colours and favorite tastes. I have also triedfor the first time chinese red meat radish. I love it and it looks so nice with the pink colour inside. Everything was very easy to prepare. Toasted veggies 30 min in the oven at 200 degree C and the rest just washed and sprinkled with oliv oil and apple vinegar + Hymalayan salt and black pepper.

My lunch today was a big plate full of raw and toasted veggies with humus and peanut butter dressing. Great colours and favorite tastes. I have also triedfor the first time chinese red meat radish. I love it and it looks so nice with the pink colour inside. Everything was very easy to prepare. Toasted veggies 30 min in the oven at 200 degree C and the rest just washed and sprinkled with oliv oil and apple vinegar + Hymalayan salt and black pepper. RECIPE :โคต ๐Ÿ€for the cupcakes:
1 cup puffed buckwheat seeds
1/2 cup puffed amaranth 
2 tbsp shreadded almonds
1/2 cup toasted sunflower seeds
60g dark chocolate (melted)
2 tsp coconut oil ( melted ) .
๐Ÿ€for the cream:
1 avocado 
2 tbsp peanut butter 
2 tbsp agave syrup 
1 tbsp coconut flour
1 tsp vanilla 
8 dates 
2 tsp coconut oil ( melted ) 
6 tsp raw cocoa powder 
pinch of salt
8 raspberries
๐Ÿ€CUPCAKES:
Take the coconut oil and chocolate and melt it on a small heat in a pan. Mix the melted liquid with the dry ingredients and put the mas in cupcakes forms. I had 8 cupcakes. Put them into the fridge.
๐Ÿ€CREAM:
Process all ingredients in a food processor until well combined. Decorate the cupcakes with the cream using garnier syringe๐Ÿ˜

I had pancake's day today.๐Ÿ˜‰ It's been a long time since I have made them last time. I found a brilliant recipe, easy, quick and super tasty.They are made from buckwheat seeds and apples. I normally don't like to stay long in the kitchen, frying pancakes but this cake worked fantastic and was redy very quick.

RECIPE:
250 g buckwheat seeds soacked overnight 
1, 1/2 apple 
pinch of Hymalayan salt
1 tsp cinnamon 
2 tsp coconut sugar 
pinch of turmeric
coconut oil for frying
.
Soack the buckwheat seeds one night before.On the next day pour away water and process it in a food processor, till you get a smooth consistency. Wipe the apples on the grater and add them to the mixture. Add also cinnamon, salt, sugar and turmeric. Process it again. Melt a bit of coconut oil on a frying pan and place the mixture, forming round pancakes. Fry about 3 min each side on a medium heat.

How about these chocolate cupcakes made from nuts, seeds and puffed seeds mix...? I have wanted to create my own recipe for a long time. Energy nicecream with espresso  and some other super food ingredients made me awake this morning. I couldn't manage to eat all, it made so full although it's very light kind of meal. I normally like to have warm breakfast, especially when it's cold, however this was a nice change.  In summer I was struggeling with melting nicecream as here is very hot so this time it was super easy th deal with the mixture๐Ÿ˜ƒHave a great evening ๐Ÿ™Œ ๐Ÿญ 
INGREDIENTS:
2 frozen bananas 
1 frozen khakki 
1 tsp maca powder 
1 tsp inulin powder 
1 tbsp vegan protein 
1 espresso 
handful of mixed seeds like sunflower seeds, puffed buckwheat, puffed amaranth, some nuts and coffee powder on the top.
PREPARATION:
Let the bananas thaw for a couple of minutes. Process them in a food processor and add khakki + all other ingredients. Pour the espresso in to the jar and add the ready nicecream and mix slightly to get nice paterns on the side of the jar. Add the toppings and sprinkle with instant coffee powder or chocolate.

It's cold outside and I was wondering how can I warm up myself? I had one buttersquash pumpkin in my storage and made a spicy and creamy soup. It came up amazingly good and the hottness of small chili pepper just worked as a fire๐Ÿ˜๐Ÿ”ฅ๐Ÿ”ฅ๐Ÿ”ฅ Will share the recipe later or in a few days with another shot of the creation. New year super light pizza with sweet potatoes base! Anybody fancy๐Ÿ˜? Just finshed it and it smells amazing. I hope  it will also taste good๐Ÿ˜
This time I attach the recipe.
Have a nice evening!

CRUST:
2 medium sized sweet potatoes
coconut oil (melted)
sea salt
black pepper
pizza spice mix
garlic clove, minced

FILLING:
pesto sauce I used wild garlic pesto
125 g organic mozzarella (and/or feta or vegan cheese)
couple of handfuls baby spinach leaves
1 purple onion
4 stalks of cauliflower
2 slices of lemon
6 small orange tomatoes
green olives
fresh sprouts of your choice
fresh basil
1/2 courgette sliced

Preheat the oven to 200 C degrees. Cover a baking tray with a parchment paper. Peel the sweet potatoes and slice them up with a  slicer into very thin, almost transparent slices. Arrange the sweet potato slices on the baking tray so that they overlap each other and make a circle. Fill all holes and also the inner circle. Now sprinkle on some melted coconut oil, salt, black pepper and pizza spice mix. Add also the garlic. Bake in the oven for 10-15 minutes until the sweet potato slices get softened. Take out from the oven. Spread some pesto on the crust and add the cheese. Add also the spinach leaves. Cut the  onion and cauliflower into small pieces and sprinkle them on the pizza. Slice the courgette and add it with lemon slices, split tomatoes and olives. Bake in the oven for 10 minutes until the cheese melts and the filling get a nice tanned color. Take out of the oven and top with fresh basil + sprouts. Enjoy!

Recipe:
200 ml coconut milk (heated)
200 g buckwheat soacked overnight 
4 tbsp wild blueberries 
2 tsp xylit
2 tbsp peanut butter 
2 tsp maca powder

I don't know how you have been doing in the Christmas break but I have gained a couple of kilogramms.๐Ÿ˜จ Great food from mum and friends, I have visited, have left some visible signs๐Ÿ˜ Now I am on my own light post Christmas diet which I really enjoy. Today I made a blueberry buckwheat smoothie for my breakfast. Recipe: 200 ml coconut milk (heated) 200 g buckwheat soacked overnight 4 tbsp wild blueberries 2 tsp xylit 2 tbsp peanut butter 2 tsp maca powder Blend all ingredients together and till smooth and put in your bowl or glass. Millet porridge with wild blueberries - that's how I started my day. I got a big bag of wild blueberries from my mother, who organized them for me in the summer. Finally I picked them up and now I am back in my kitchen, trying to get use to new/old rutine. How was your day guys? .
My breakfast recipe:
100g millet 
200ml coconut milk 
10 dates 
pinch of salt 
1/2 vanilla powder
5 tbsp wild blueberries .
Put the millet and milk in to a pot at medium heat on the oven. Add fine chopped dates and, vanilla pwder and salt. When the millet absorbs the milk and becomes soft, take from the oven and let it cool down. Put into a jar making layers with wild  frozzen blueberries. The warm millet releases the juice from the berries.Top with whatever you like.I used coconut flakes, dates and chocolate.

Here the recipe:
1/2 cup oats
1 tbsp chia seeds 
3/4 cup plant milk 
1 tbsp maple syrup 
1 tbsp tahini/ nut butter
1 tbsp coconut milk 75 % 
1/2 tsp cinnamon 
1 tsp aronia powder (I used from @go_aronia 100%organic)
Put all ingredients in a jar on the evening before, stir to combine all well, put the lid in and shake again. I had my jar on the kitchen work table. Put the overnight mixture in a new glass or jar and decorate with your favorite fruits and toppings.

Hello weekend friends๐Ÿ˜‚....It's the last weekend in this year. How do you feel about that๐Ÿ˜? Every time when an old year is going to end I think more about  the new one  rather than the past one. How about you?
Today's breakfast  was overnight rice and quinoa flakes soacked in almond milk, cinamon and dates๐Ÿ˜ layered with slightly  carmelised apples + almonds and xylit.
So this is what I used for these 2 glasses:
Overnight flackes:
400 ml almond milk 
5 chopped dates
200 g rice flakes 
150 g quinoa flakes 
1/2 tsp vanilla powder 
1/2 tsp cinnamon + any other spices
2 tsp any nut butter (I used peanut butter)
Put all ingredients in to a pot and let it to get warm on an oven plate. Switch off the oven  and let it cool down. Leave it in the kitchen for overnight. 
for the apple layers:
1apple
2 tbsp almond flakes 
1/2 tsp cinnamon 
2 tsp xylit
1 tsp coconutoil 
Melt the coconut oil in a frying pan and add chopped apple and the rest of ingredients. Stir and fry it a few min. 
Serve in glasses or bowls making layers of both mixtures. Add your favorite toppings.
