Pumpkin energy bites by @katyacreates 🤗💕
•5tbsp pumpkin puree
•5tbsp boiled chickpeas
•3tbsp protein powder (I had @purya.superfoods rice protein)
•1tsp turmeric powder
•1/2tsp cinnamon powder
•3tbsp ground oats
Basically just chuck everything into a food processor and process on high speed adding more peanuts or oat flour if the mixture appears too thin.
You might also need to add more agave or other syrup if you want your energy balls to be sweeter.
When you find the thickness you like - put the mixture in the fridge for half an hour before rolling it out into balls and coating them in dessicated coconut, crushed peanuts or whatever else you feel like 💕

Berry smoothie bowl by @my_vegan_fridgie with tons of yummy toppings! 😀❤️ For the smoothie, blend 1 cup fresh raspberries, 4-5 frozen strawberries, 1/2 banana, 1/2c coconut water, juice from 1 lime, 1 tbsp chokeberry powder, and 1 tbsp coconut sugar or agave syrup (optional). Topped this lovely smoothie bowl with fruit, chocolate covered almonds by @therawchocolatecompany and raw chocolate bits by @consciouschocolate. YUM! 🤗💕
Slow-roasted sweet potatoes, stuffed with tandoori roasted chickpeas, cilantro, lime cashew cream by @hannah__chia 😊❤️
bake whole sweet potatoes at 300F until caramelized and soft (takes over an hour; you can also roast at 400 or 425F for faster results but I like the taste and texture of the longer time and lower temp).▫️
for chickpeas, toss 1 can rinsed chickpeas with some water or olive oil, ½ tsp cumin, ½ tsp coriander, ½ tsp turmeric, 1/2 tsp garlic powder, ½ tsp paprika, 1/2 tsp salt, a dash of cayenne pepper and smoked paprika. roast for 20-25 min on a baking sheet in a 375 F oven. ▫️
for cashew cream, add 1 cup cashews (soaked for 2+ hours and rinsed) 1/2 cup + 1 tbs water, 1 clove garlic, 1/2 teaspoon salt, and 1 tbs lime juice in a food processor or high-speed blender and puree until very smooth. taste, and add more water or different spices to desired taste and consistency. Enjoy!

Lingonberry nana cream by @my_vegan_fridgie❤️😀Instructions:
100g frozen raspberries
1 tsp lingonberry powder
100g frozen strawberries
1 frozen banana
50 ml almond milk
1-2 dates ( optional )
Put all the ingredients in a blender.
Blend until smooth.
Serve with freeze-dried raspberries.

Chocolate chip cookies by @thegreenchocolate 😀❤️🍪 Instructions:
150 g spelt flour, 30 g coconut flour, 80 ml canola oil, 80 g raw caine sugar, 30 g apple sauce, 20 g tahini, 1 tsp baking powder, 1/2 tsp baking soda, pinch of salt, 50 g chopped dark chocolate. Mix sugar & oil until creamy. Add apple sauce & tahini, plus vanilla extract optional. Fold in the flour, baking powder, baking soda and salt. 1/3 at a time. Mix carefully with a wooden spoon. Lastly fold in the chopped choc. Place the dough on a tray lined with baking paper (use an ice cream scoop if you like to shape the cookies) and bake for 10 minuten on 175°C.
